New Arrival | Killowen Distillery
At the foot of the Mourne Mountains in Northern Ireland lies a small distillery (producing around 20,000 liters of spirits per year) that has become a symbol of authenticity and artisanal production: the Killowen Distillery.
With two traditional copper stills (Christoir 1000lt and Broc 800lt), natural fermentation, and barrels of unique origin, Killowen creates whiskey and spirits without filters or artificial smoothing. (It stands out for its manual production, experimental approach, and absolute commitment to authenticity. Its philosophy is based on “the way it used to be”, i.e. reviving traditional Irish distillation techniques, but with a modern spirit of experimentation).
Killowen uses open-top fermenters, which allow wild yeasts from the environment to enter. Fermentation lasts 5-10 days, which is unusually long for most distilleries, allowing for deeper development of aromas and esters.
Second distillation is slow and controlled by hand, while condensation takes place in worm tubs, giving the distillate a fuller and more oily profile.
